Bacardi Maestro Watermelon Mojito Recipe

Since tasting Bacardi Maestro just last year from this post, I have fallen in love and literally can’t get enough. It has become my go-to for the summer season when it comes to delicious fruity cocktails and even boozy popsicles!

And now that the warm weather (and sadly, humidity) has hit us, I am always looking to enjoy a cocktail on our balcony and more often than not, I like to put together a recipe that is boxy enough but still really refreshing. I of course love a good Mojito, but since I had so much watermelon at home, I thought I would mix these two favourites to make something really delicious and refreshing.

While I enjoy Bacardi Maestro on its own over some ice and mint for flavour, it has really become a staple on my bar cart with its smooth flavour, allowing me to mix it with a number of ingredients and my favourite – real fruit!

This recipe is incredibly easy to make and even easier to enjoy on a hot summer day with an extra side of watermelon and a large pitcher so you can refill and keep them coming! And since Father’s Day is tomorrow, I’ll be serving these up for my dad and me since a Rum cocktail is his absolute favourite!

Bacardi Maestro Watermelon Mojito Recipe

Ingredients:

  • 10 ounces Bacardi Maestro 
  • 30 large fresh mint leaves
  • 4 thick slices fresh watermelon, seeds and rind removed
  • 1/2 cup simple syrup
  • 1/3 cup freshly squeezed lime juice (3 limes)
  • Sprigs of mint and spears of watermelon, for serving

Directions: 

  1. Use a mortar and pestle to mash the mint leaves – you can add a little sugar to help break up the leaves and get the oils from the mint extracted.
  2. Remove and discard the rind and seeds of the watermelon. Place the watermelon, rum, simple syrup and lime juice in a blender and blend until smooth. Stir to get the froth to go down.
  3. Put the mashed mint into a large pitcher and add in the watermelon mixture. Stir to combine the mint with the juice.
  4. Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and spears of watermelon.
