Watermelon Sangria Popsicles

The weather this past week in Toronto has really been amazing. I spent Victoria Day on the beach with the boyfriend, enjoying music, a Venti Starbucks and laying out in the sunshine. It was really the best feeling to finally say that the hot weather is here to stay. I actually don’t think I’ve even put on a coat since over a week ago!

With the warm weather comes patio season, or if you’re a homebody, balcony season! Since moving into my new place, I’ve really begun having loads of fun in the kitchen and creating delicious meals and even some fun recipes as well! After recently picking up some popsicle molds, I was on the hunt for a few popsicles recipes, and I knew I had to try something with a little wine or alcohol in it!

If you love sangria like I do, then you are going to love these Watermelon Sangria Popsicles. A perfect mix of wine and fresh fruit, these popsicles were a hit when I had some friends over on a warm weekend afternoon! They are super easy to make to0 and if your guest prefers a drink version, just fill a quarter wine glass of white wine and drop a popsicle into the glass and watch it melt perfectly.

Watermelon Sangria Popsicles 

Ingredients

  • 4 Cups (600g) Watermelon, cut into small chunks
  • 1/2 C (118g) White Wine
  • 1/2 oz Cointreau
  • 1 oz Vodka
  • 1 oz Simple Syrup

Recipe

  • Place watermelon, wine, vodka, cointreau and simple syrup in a blender and blend on high until ingredients are smooth.
  • Pour mixture into popsicle moods. I bought mine from Loblaws and loved them but removed the covers and went with traditional popsicle sticks for this look. Make sure to clean molds before putting the popsicles in the freezer so it doesn’t get messy!
  • Insert molds into the freezer and freeze overnight. (After an hour or two in the freezer, I use the popsicle sticks to stir the ingredients together inside the molds just to make sure that the ingredients don’t separate)
  • To release popsicles, run warm water over the molds and they will release easily.
