Ready for Spring With This Citrus Ricotta Bowl 

Just over a week ago I attended an event hosted by my friends at Sunkist, and boy did it get me pumped for Spring. From the citrus-inspired decor to the vibrant and fruity displays along with the touch of sunshine made me anticipate Spring even more than I did already. However, the biggest thing I learned at this event may surprise you just as much as it surprised me! While citrus fruits offer the look of Spring and Summer, what most don’t know is that some of these vitamin-C boosting fruits are actually in season in the middle of winter. So that means while we bundle up and bear the cold chilly weather, beautiful citrus fruits like the Cara Cara Navel Orange, the Blood Orange and even Grapefruits – to name a few are all in season!

For me, it’s the perfect way to feel like Spring is just outside my window. Whether it is used for baking, home decor, snacking and even skincare, citrus is so versatile and offers a number of different uses – all of which I indulge in from time to time!

Last weeks Sunkist event was the perfect opportunity to learn about a number of the recipes that include citrus like a Lemon Coconut Mask that I have already tried and loved as well as Decorative Dried Citrus Slices which make for the perfect addition to citrus scented candles. For this post however, I was inspired by the sweet citrus taste of the blood orange and my love for breakfast bowls!

Winter Citrus Ricotta Breakfast Bowl

Ingredients:

• 1/3 cup whole milk ricotta cheese
• 1-2 tablespoons honey
• 1/2 teaspoon vanilla extract
• 1-2 Sunkist blood or cara cara oranges or grapefruit, sliced
• 1 banana sliced
• Ace Bakery granola 
• toasted nuts/seeds 

Instructions:

1. In a small bowl stir together the ricotta, honey and vanilla. Top with citrus slices, banana, passion fruit and granola. drizzle with honey. Enjoy!
